Seafood Gumbo

2 lb of seafood:  small scallops, fish, shrimp, or crabmeat

1 qt water

2 lb fresh okra, sliced ¼’ slices

2 medium yellow onions, chopped

2 medium bell peppers, chopped

½ C celery, chopped

4 Tbsp vegetable oil

3 Tbsp flour

3 medium tomatoes, diced

2 cloves garlic, minced

Salt & Pepper to taste

Prepare a rue (thickening agent) with vegetable oil and flour in a 300 degree (approximately 12 charcoal briquettes) Dutch oven.  Cook until brown, stirring often and being careful not to burn.  Add onion, bell pepper and garlic.  Slowly stir in 1 quart of water.  Add diced tomatoes, okra and celery.  Add Salt and Pepper to taste.  Cover and cook about 30 minutes until vegetables are done.  Add scallops and simmer an additional 6 minutes.
